I was really craving chocolate baked goods one day, and thought of making this simple recipe. It’s a throw back from my raw vegan days, but it is nutrient rich and every bit as decadent as a piece of chocolate cake!
Ingredients
- ¾ C. Raw, unsalted walnuts and pecans - - Use about 3/4 walnuts and 1/4 pecan.
- 1 C. Roughly chopped dates, pre-soaked in some water for about 10 minutes.
- ¼ C. Shredded, unsweetened coconut - - I love "Let's Do Organic" brand.
- ½ Tbsp. Pure vanilla extract
- 2 tsp. Water
- 3 Tbsp. Unsweetened cocoa powder
- Optional add-ins: Collagen Hydrolysate for a protein boost, dried berries of any kind
Instructions
- Roughly chop soaked dates.
- Add dates, nuts, cocoa, shredded coconut, vanilla and water into a food processor.
- Grind in food processor until ingredients all come together and form a dough-like texture. It may seem like it's taking forever, but keep the processor running. It will come together.
- When dough has formed, scoop it out of the food processor and place in a small pan or tupperware container lined with wax paper.
- Press the dough down evenly in the container. The smaller the container, the thicker your brownies will be.
- Pre-cut the dough into six slices and place into the freezer for about 20 minutes.
- Remove and devour.
