I am a chocoholic – – I admit it! I especially love finding ways to add as many nutrient-rich ingredients as possible into my treats. This mousse is no exception. The secret ingredient? Avocados. Full of fiber, vitamins and healthy fats, avocados are great in smoothies, on salads, by themselves, and you guessed it, as a base ingredient for our mousse! Although you may be skeptical, give it a try. I think that you will be pleasantly surprised. My kids love it, which is the ultimate test for me.

I like dark chocolate, but regular unsweetened cocoa powder works too.
Ingredients
- 4 medium ripe Haas avocados (still green)
- 2 Tbsp unsweetened dark cocoa powder
- 1 Tbsp pure maple syrup
- 2 tsps pure vanilla
- 1 Tbsp of coconut, almond, or hemp milk, or water.
- A pinch of sea salt (start with a tiny bit, and adjust to taste)
- A food processor
- * Optional add-in: 4 Tbsp Collagen Hydrolysate
Instructions
- Cut the avocados in half and discard the seed.
- Scoop the flesh our of the avocado and put into food processor.
- Add 2.5 Tbsp of cocoa powder.
- Add 1.5 Tbsp of maple syrup.
- Add 2 tsps of milk of choice or water.
- Add sea salt.
- Blend all thoroughly in food processor. You may need to turn it off occasionally and scrape the sides. Mix until as smooth as possible.
- Top with berries, nuts or homemade whipped cream.
- Enjoy!
