Have you ever had a plantain? Homemade plantain chips are one of my “go to” snacks when I am craving salty foods. My kids love them too.
Plantains are a great complex carbohydrate, and are full of fiber, as well as potassium, magnesium, and Vitamins A, C, and B-6. They are also very versatile. You can bake with them, make a delicious grain-free pancake, and of course, an awesome chip!
Easy Plantain Chips (AIP Elimination)

Ingredients
- 1 Green Plantain
- 1 medium sized frying pan (I love using a cast iron skillet)
- Organic Coconut Oil
Instructions
- Add 2 tbsp. of organic coconut oil to your frying pan.
- Heat on medium high, and wait for the oil to melt.
- Using a vegetable peeler, peel the plantain.
- Cut into thin slices.
- Once the oil is hot, add in the plantain slices.
- You will need to flip them once each side has browned. While they are cooking season with sea salt, to taste.
- Remove them from the pan with a fork and enjoy them once they’ve cooled down.
