Sometimes when you’re craving something sweet, fruit just doesn’t cut it!
I love these coconut bars, because you can make them in one bowl, they are super easy and filled with healthy fats and antioxidants, but low in sugar!
My kids even love them, but I usually don’t share.
No Bake AIP Vanilla Chocolate Chip Coconut Bars

Ingredients
- 2 cups unsweetened, shredded coconut (I use the Let’s Do Organic brand)
- 1 tbsp collagen powder
- 2-3 tbsp pure maple syrup
- 5 tbsp organic unrefined coconut oil
- 2 tsp pure vanilla extract
- 4 tbsp carob chips
- sea salt, to taste
Instructions
- Add all ingredients to a bowl.
- Mix thoroughly, until extract, maple syrup and coconut oil are completely mixed in.
- Transfer to a small baking pan, pressing the mixture down with a spoon, so it is evenly spread. You do not need to use the whole pan. Just use part of the pan, ensuring that you make the bars about 1/2″ thick.
- Put the pan in your freezer for about 10-15 minutes.
- Slice it up and enjoy! I like to use a pizza cutter.
